We do not eat a lot of vegetarian at all but we love a good quiche! And I've fried up some delicious fresh snapper with a simple flour, egg, breadcrumbs batter and my girls loved it! Otherwise we have ftozen crumbed whiting on wraps as an easy meal 😁

My boys like minestrone, pumpkin soup, spaghetti with roast capsicum sauce, zucchini slice (you could sub out the bacon) and risotto with butternut and corn ☺️

460g jar roast capsicum

350g pasta

1 cup double cream

½ C parmesan, grated

1 Tablespoon butter

Onion, diced

1 teaspoon minced garlic.

1/2 teaspoon smoked paprika

parsley, salt & pepper

Cook pasta according to packet instructions

Meanwhile, melt butter and fry onions until soft.

Add garlic and fry for another minute or two then place in blender with the roast capsicum and pulse until smooth.

Pour back into pan and keep on

a simmer. Stir in cream, then add parmesan, parsley, paprika

and

seasoning. Drain pasta and toss through sauce until completely coated 💛

This sounds so delicious!!! I got diagnosed with high cholesterol hence trying to eat more veggies and fish. It might have to be a special treat 😍
